Taco Soup

2 tbsp. oil
half an onion, chopped
cooked ground beef OR 1-2 cups Hereford Beef Chunks, chopped & shredded
4 cans chicken broth
2 cans chopped tomatoes
1 small can green chilies
1 tomato can of water
1 pkg. taco seasoning mix
1 pkg. ranch dressing mix
1 tbsp. Knorr chicken flavor bouillon, if necessary
2 cans black beans, drained
1 cup cooked leftover rice, or ½ cup raw rice

Toppings: Sour cream, tortilla chips (or Fritos), cheddar cheese, avocado

Blend tomatoes, chilies, and water in blender until smooth. In a large pot, saute onion in oil until soft. Add cooked meat, or brown raw meat at this time. Add broth, tomato-chili mixture, seasonings, and raw rice (if using) and simmer for about 30 minutes until rice is cooked and flavors are blended. Add beans (with liquid) and cooked rice (if using) and simmer until heated through. Serve with toppings as desired.
